Oven-Baked Puff Pancake Recipe:

* 2 Tablespoons of Butter
* 3/4 Cup of Milk
* 2 Eggs
* 1/2 Teaspoon of Salt
* 2/3 Cup of Flour

In a 9-Inch glass pie plate, melt the 2 tablespoons of butter in the oven. In a large bowl combine the other ingredients before pouring it into the pie plate. The butter acts as the greaser for your pie plate and does not need to be combined with the mixture. Bake for 20-25 minutes, or until golden brown.

Because of the way this pancake cooks, you can fill it with a wide variety of things. I suggest frying up a pan full of vegetables while the pancake is cooking, and then fill the pancake with the vegetables and some shredded cheese. (Things like onion, bell pepper, spinach, mushrooms. Maybe a little bit of dill and ground pepper.)
