Yogurt Pancake Recipe:

* 3 Eggs, separated
* 1/4 Cup of Sugar
* 1/4 Cup of Butter, melted
* 2 Cups of Yogurt (I like using the ones with fruit puree!)
* 2 Teaspoons of Baking Powder
* 1 Teaspoon of Baking Soda
* 1 and 1/2 Cups of Flour

Variations

* Blueberry Pancakes: Add 1 Cup of fresh or frozen Blueberries
* Pecan Pancakes: Add 1/3 Cup of chopped Pecans
* Banana-Nut Pancakes: Add 1/2 Cup of mashed Banana and 1/3 Cup of chopped Walnuts

In a small mixing bowl, beat the separated egg whites at high speed, scraping the bowl often, until stuff peaks form. (If you're using an electric mixer, this should take 1 or 2 minutes.) Set the egg whites aside. In a larger mixing bowl, combine the egg yolks with all remaining ingredients. Beat at medium speed until well mixed.

By hand, gently fold in the beaten egg whites into your larger mixture. It is okay if there are small fluffs of egg whites that remain in the batter. Pour 1/4 Cups of batter at a time into your frying pan or griddle and cook until bubbles form before flipping.

The reason there's no salt here is that there will 1. probably be salt in your butter, and 2. the amount of baking soda and baking powder in this will definitely add the salt flavor for you. If you aren't using salted butter, maybe add a pinch before adding the flour.

My auto-correct is telling me that Yogurt is actually spelled as Yogourt. I have never seen it spelled like that before.
